A free virtual 30-minute consultation designed for decision-makers (owners, managers, chefs) to identify challenges in catering to vegan guests and guests with food allergies. Menu Support
Menu Audit: Receive an extensive menu evaluation via email, including a detailed report with allergen labeling suggestions and ideas for on-theme vegan dishes.
Menu Evaluation: Collaborate via a 1-hour Zoom call or in person meeting with your chef, manager and owner to create a strategic plan for developing mushroom-plant-based dishes, including a menu audit report and guidance on vegan food prep.
Recipe Development and Menu Creation
Move beyond basic salads and mock meat burgers with our expertise in creating nutritionally balanced meals rich in fiber, micronutrients, myconutrients and phytonutrients. We tailor existing dishes to be vegan-friendly and develop new, on-theme dishes that appeal to all customers, using the magic of culinary mushrooms and other plant-based proteins. I will use my knowledge of food waste prevention and try to use every part of the vegetable and mushroom.

Super Market Tour and Product Sourcing
Discover the basics of plant-based nutrition. and thought process when creating recipes to I will guide you through the process of sourcing the best local culinary mushrooms and vegetables, diversifying fiber types for a healthy gut microbiome, and sourcing other vegan staple proteins like affordable Tofu and Tempeh.
On-site Kitchen and Service Training
Kitchen Training: I will train your kitchen staff on how to create the vegan dishes we decide on. We will come up with the best method of creating the dishes to avoid cross-contamination to the best of your ability. We will go over macro, micro, myco and phytonutrients prominent in each dish so chefs have a better understanding of plant-based nutrition.

Service Training: I will go over basics of the vegan consumer and go over nutritional details of each dish we create. My goal is to get everyone excited about these dishes so you can sell them with ease.
Menu writing & labeling, including drinks/wine menu
I will provide a detailed document of new vegan recipes to be included in your menu, enabling your graphics designer to update your current menu seamlessly. This document will highlight existing dishes that can be easily veganized, ensuring you make the most of your current offerings. Additionally, proper labeling for all dishes and drinks, including allergens, will be meticulously outlined. You can use this comprehensive document to create a dedicated vegan menu or integrate it into a new, cohesive overall menu.
